Lentil Soup Mix

     This lentil soup is so easy to make and it will absolutely warm your soul.  It is super filling and hearty.  It is pure comfort food in a bowl!  It is perfect on its own but add in some pulled pork, chicken, or beef and it pulls it up to a whole new level.  It's good enough to serve on its own and it would be a complete meal.  If you feel you need something more, try it with some fresh homemade bread.

Lentil Soup Mix


1 c. dried lentils
1/2 c. dried yellow split peas
1/2 c. long grain white rice
1/4 c. beef bouillon granules 
1/4 c. dried minced onion
1/2 c. dried split peas
1/2 c. barley
1 tsp. minced garlic
1 tsp. parsley
1/2 tsp. cumin
1/2 tsp. rosemary

     Layer the ingredients in a quart jar, and include the following instructions on the jar:  In a large pot, brown 1 lb. ground beef.  Add in the contents of the jar to the pot with 12 cups of water.  Let it come to a boil and simmer for 45 minutes. 

     To have it extra flavorful, use 6 cups of water and 6 cups of beef broth instead of 12 cups of water.

     This one-pot healthy lentil soup recipe is so delicious, it is sure to become a staple in your home!
