Homemade Pumpkin Pie Spice Mix


    This is another super quick and easy spice mix.  It smells so good.  It adds the perfect flavor to whatever you add it in.  You can double or triple the recipe easily and can adjust the amounts to find the perfect flavor profile for your family.
 

     Once you start making your own spice blends, you will never want to use store-bought again!
 
  • 3 T. ground cinnamon
  • 2 tsp ground ginger
  • 2 tsp ground nutmeg
  • 1 1/2 tsp. ground allspice
  • 1 1/2 tsp. ground cloves
  

    In a small bowl, mix together the spices.  Stir well and then store them in a small mason jar.  

    Use this mix in your favorite pumpkin pie recipe. You can also use it for so much more.  Add a tablespoon of it into your coffee right before brewing.  Add some in your homemade bread dough, muffins or oatmeal.

Super Moist Pumpkin Nut Bread Recipe


            This pumpkin bread turns out so flavorful, moist and delicious.  Great for breakfast, lunch, supper or as a great snack.  I like putting some melted butter on a slice for bites of perfection.

 


·        3 ½ c. flour

·        3 c. sugar

·        2 c. pumpkin (canned, 100% pumpkin)

·        1 c. chopped black walnuts

·        1 c. vegetable oil

·        2/3 c. water

·        4 eggs

·        2 tsp. baking soda

·        1 ½ tsp. cinnamon

·        1 tsp. cloves

·        1 tsp. nutmeg

·        1 tsp. salt

·        1 tsp. vanilla

·        ½ tsp. black walnut flavoring

 

Preheat your oven to 350 degrees.  Generously grease two 8” or 9” bread pans.  Set aside.

 Combine all the ingredients together in a mixing bowl.  Mix well but do not over mix because bread will turn out really dense.  It will still taste amazing but will be denser and not as soft.

 Bake for one hour or until completely done.  To check to see if the bread is done, stick a toothpick into the center and if it comes out clean, they are done.

Tomorrow is My Birthday!


    Tomorrow, October 16th, is my birthday.  I will be 54 years old.  I would love for you to share my blog with others by sending them a link to my blog and sharing my Twitter, Pinterest, Instagram, and Youtube Channel links.  It would be such a wonderful gift to me that I would certainly appreciate.

Simple Baked Butternut Squash

            Butternut squash is so good.  I love it and my husband who usually does not like any type of squash will eat this.  It tastes remarkably similar to sweet potatoes so if you like sweet potatoes, you’ll love this too. 

 

·        2-3 lbs. butternut squash

·        ½ c. butter, melted

·        ½ tsp. cinnamon

·        ¼ tsp. salt

·        1/8 tsp. pepper

·        1/8 tsp. nutmeg

·        Parsley (optional, to garnish)

 

Preheat your oven to 375 degrees.  Grease a 9”x13” cake pan and set aside.

Wash your butternut squash and peel it using a potato peeler.  Slice the squash vertically down the center.  Scoop out the seeds.  Now slice each squash half into about ½”- 1” pieces. Put the squash pieces into a large bowl.

In a small bowl, combine the butter, salt, pepper, cinnamon and nutmeg together.  Pour over the squash and stir well to make sure all the squash is coated.  Place the coated squash into the cake pan and bake for 45-50 minutes or until the squash is done.  It will be fork tender when it is done.  Remove, sprinkle with some parsley, if desired, and enjoy. 

 


 Serves 6 with each serving having about 30 carbs.

This lovely side dish goes with just about anything.  I have served it with Dr. Pepper Shredded Chicken Sandwiches, with BBQ ribs and with Pineapple Glazed Ham.  You can’t go wrong serving it with any meal.
