Cooking Ground Beef in the Crock Pot

    I often buy my ground beef in bulk because it is so much cheaper this way.  I was speaking to a good friend of mine the other day at the grocery store and she said she never buys 5-10 pounds at a time because she didn't want  it to go bad before she could cook it.  I told her I cook 5 pounds at a time with very little work and she wanted to know how.  I explained it to her and thought some of my readers may be intrigued also.  So here is my technique for doing so.
 
 
 

      It is super easy.  All you need to do is turn on your crock pot onto low and allow it to heat up for 30 minutes.

      Open up your package of meat (5 pounds) and put it in.
 




       Add in 1 cup of beef broth.  If you have no beef broth, just add in 1 cup of water.  The meat will still turn out flavorful and good even if you use water.  It is just a bit more so with beef broth.

    Put the lid on the crock pot and leave it alone for 2 hours.  After 2 hours, I stir up the meat and add in 2-3 T. of dehydrated chopped onions.  You can add in salt, pepper, garlic powder, seasoning salt or whatever seasonings you prefer at this point.  I only like to season my meat with onions because I use it in all kinds of dishes and only onions works best for all the meals I cook.
 
 

 

         After you add in the onions or whatever else you plan on adding in, stir again and replace the lid and allow it to cook for a few more hours.  After the meat has been cooking for about 4 hours total, it is time to drain the meat and divide it up into freezer safe baggies.  Easy-peasy.

*****NOTE***** If you are using frozen hamburger meat, allow it to cook for 3 hours before stirring for the first time and allow it to cook for almost 8-10 hours total.

     The prepared hamburger meat goes great in tacos, Cheeseburger Casserole, Pizza Lasagna, and my Sloppy Joe Tater Tot Casserole.


     Other things I like to keep my freezer stocked with to make meal times easier include:  Make Ahead Hamburger Patties,  Freezer Biscuits, and Freezer Meal:  Sweet 'n Sour Chicken.

Refried Bean & Rice Burritos

   As I stated in yesterday's post, I cook a lot of beans and rice.  One way we utilize them is by making homemade burritos.  These taste sooo good and are easy to make.






Homemade Bean & Rice Burritos

Refried beans (Click on the name to find the recipe)
1 c. uncooked rice
1 serving taco seasoning (or 1 envelope)
cheese
10 tortillas

     You can either buy some refried beans or use my recipe.  If you use the recipe I have, there will be enough refried beans to make 10 decent sized burritos and enough left over for 3 servings of refried beans to eat as a side dish.

       Get a small pot and add 2 cups of water and add the uncooked rice to the water.  Bring it to a boil and then stir in the taco seasoning.  Turn the heat low, cover, and simmer for 15 minutes.  Once the rice is done, you are ready to put together your burritos. 
 
     For each burrito, spoon two spoonfuls of refried beans into the center of the tortilla, then the same amount of rice on top and then sprinkle it with cheese.

 Roll up and either heat and eat or wrap and foil and freeze.  We ate 5 of them and froze 5 of them.  
 
      To cook them, place them on a cookie sheet in a 350 degree preheated oven for 15 minutes.

    To freeze the burritos, just wrap each burrito in foil and then place in a freezer bag.

      To cook from a frozen state, cook in a 350 degree preheated oven for 20 minutes or microwave each one for 3 minutes.

Chocolate Chip Drop Biscuits

   We do a lot of freezer cooking at our house and one thing we make EVERY week is Chocolate Chip Drop Biscuits.  Our family loves them for breakfast and hope your family will too.



Chocolate Chip Drop Biscuits
 
 3 c. flour
1 c. milk
1/2 c. butter
1/3 c. sugar
1/2 bag or 1 c. chocolate chips
1 1/2 T. baking powder 
3/4 tsp. salt
 

   In a large bowl, mix together the flour, sugar, baking powder, and the salt.  Stir in the margarine.  Mixture should be crumbly.  Stir in the chocolate chips.  Add the milk, a little at a time, just until the dough forms.  

Drop by spoonfuls on a cookie sheet.  Bake at 425 degrees for 12 minutes.




We eat these fresh from the oven and then we throw the rest into a baggie and freeze them for future breakfasts!  Reheat 2 at a time in the microwave (about 25 seconds).  Great for breakfast or a quick pick-me-up!

Makes 2 dozen.
