I don’t know about you, but I absolutely love green beans and potatoes. They make such a fulfilling side dish. They pair so well together and compliment any main dish beautifully.
· 2 c. potatoes, peeled, cubed and cooked
· 1 ½ c. fresh green beans, trimmed or 1 can of green beans
· 4 T. butter
· 2 T. olive oil
· 2 T. onion, diced
· 1 tsp. minced garlic
· 1 tsp. salt
· 1 tsp. pepper
In a bowl, combine the potatoes, green beans and the olive oil. Stir and then add in the melted butter and stir again. Now add in the onions, garlic and salt and pepper. Stir and microwave for 3-4 minutes or until the green beans are cooked through.
