Classic Homemade Italian Bolognese Sauce

     My Bolognese sauce is an authentic Italian sauce that is full of flavor.  After just one bite, you will feel like you are dining out in Italy.  The sauce is really rich and hearty.  



      For those who don't know, Bolognese sauce was created first in Bologna, Italy and is a deep, rich, hearty sauce that is meat based.  Unlike a marinara sauce or spaghetti sauce that is tomato based.  Marinara sauce can be whipped up in a matter of minutes but a good Bolognese sauce needs to simmer and build the flavors with slow cooking.

 1 c. merlot wine (or beef broth if you prefer)

1 c. Parmigiano-Reggiano or 1/2 c. Gournay cheese & 1/2 c. shredded Parmesan 

1/2 c. half-and-half 

1 lb. ground beef

l lb. pork sausage 

28 oz. can crushed tomatoes

3 cloves of garlic, minced

2 carrots, finely chopped

2 stalks celery, finely chooped

2-3 medium sized tomatoes

1 yellow onion, diced (about 1 cup)

zest of lemon +1 squeeze of the lemon juice

2 T. butter

2 T. parsley flakes

1 T. brown sugar

1 T. olive oil

2 tsp. basil

2 tsp. oregano

1 tsp. salt

1 tsp. pepper

1/4 tsp. crussed red pepper flakes

a dash of nutmeg

 

     Heat your oven to 425 degrees.  Put your tomatoes onto a baking sheet and drizzle them with a bit of olive oil and sprinkle some salt on them.  I said to use 2-3 tomatoes but the ones we got from our garden today were really small so I used several.  Anyway, roast your tomatoes in the oven for about 20 minutes or until they are soft and a bit charred.

    Bring them out of the oven and allow them to cool for about 5 minutes and then blend them in a blender to turn them into a sauce like consistency.

     As the tomatoes are roasting, you can start working on some of the other components of the recipe.  In a large pot, melt your butter over medium-low heat.  Once it is hot, add in the onion, garlic, carrots, and celery.

     Saute the vegetables until they are soft and the onions are translucent.  Turn the heat up to medium and stir in your meat.

     Once the meat is browned, drain off the excess grease.  I always let the meat get good and dark and allow the meat to kind of carmelize by sticking to the bottom of the pan.  These brown bits that stick to the pan have so much flavor to them.  Also, I always leave some of the grease because grease adds in yummy flavor.  

    Add in all the spices and seasonings and stir.  Stir in the charred tomatoes that you blended up, the crushed canned tomatoes, and the cheese(s).  I love to use the Parmigiano-Reggiano but can rarely find them in a 1 hour radius of where I live so I just use the 1/2 Gournay cheese and 1/2 parmesan cheese and it still turns out beautifully.  Stir in the lemon zest and juice of the lemon.  Stir well and simmer for at least 2-3 hours, or all day which is even better. Yes, the hardest part of all this is having the patience to allow the sauce to simmer and build up the flavors over several hours.  It is hard but so worth it.  

 


 

     If the sauce is too thin, just turn the heat up to high and boil until the sauce reduces some but be sure to stir frequently if you do so.  

     Serve over your favorite pasta or just with some good crusty bread.  I like to serve this over a wide pasta that can stand up to the sauce.  Some of my favorite pasta with Bolognese sauce are lasagna, tagliatelle, pappardelle, fettucini, rigatoni, or even regular spaghetti noodles.  



     You can use a crock pot to make the Bolognese sauce.  To do so, cook the onions and meat and then add them to the crock pot with all the other ingredients and cook on low for 10-12 hours. 

    Goes great with some Italian flat bread or garlic bread

The Absolute Best Homemade Steak Dry Rub Recipe

   This is the best steak rub recipe to compliment the amazing flavors in your steak or use it to bump your steak up to the next level.  It smells so good and makes your steak taste even better and it is super easy to make.  This not only goes great on steak but is perfect for burgers, meatloaf, chicken or use it to enhance the flavor of soups or stews.

Absolute Best Steak Dry Rub

 1 1/2 T. salt
1 T. pepper
2 tsp. brown sugar
2 tsp. paprika
2 tsp. oregano
1 1/2 tsp. chili powder
3/4 tsp. cornstarch
3/4 tsp. garlic powder
3/4 tsp. onion powder
3/4 tsp. turmeric

    Combine all the ingredients into a pint sized jar.  Put lid on the jar and shake well.  To use, pat dry your streaks with a paper towel then generously cover each side of your steak with some of the seasoning.  Use your fingertips to gently rub the seasoning into your steaks.

Let the steak rest for about 45 minutes before cooking.  Cook as usual.

Monthly Update

    Gosh, I am sure glad May 2020 is over with.  It was a rough month for everyone and now with the civil unrest going on, June is not really off to a great start.  We all just need to continue to pray for our nation.  Pray for protection.  Pray for healing.  

    My health was not too good in May either.  Not really had any illnesses or anything but I just do not have the energy to be out of bed for more than a few hours a day.  I get up for about an hour or so in the morning and then about the same amount of time in the evenings.  With all of my medical problems and health issues (multiple sclerosis, heart failure, diabetes, etc.), my heart is having trouble pumping blood throughout my body and my feet and legs swell and my toes turn purple so I am following the doctor's orders and staying in bed as much as possible. 

  Since I have had to spend so much time in bed, I have not been able to do much blogging but will try to do better this month.  But on to the monthly update for the month of May.

     The most popular post for the month of May was my Homemade Au Jus Mix.  A mix to make delicious au jus right from the comfort of your own home.

   My most popular Youtube video on my Youtube Channel for the month of May was actually a video of my oldest son (22) playing the bass guitar.  He started sharing videos of original songs and people are really responding well to them.  

 
   On Pinterest, my top board is my Dehydrating board. And the most pinned post was on Dehydrating Peeps. And currently trending right now is my Breakfast Rice Pudding! It is filling and delicious and very economical to make.

New Goat on the Homestead: Dainty Girl had a baby girl

Super Easy Chicken Quesadillas

     This is a super quick and easy recipe for chicken quesadillas.  Let me tell you, they are so good and addicting!  These are easily one of my favorite meals.  Try it tonight and let it become one of your favorites too.

     With a few simple shortcut ingredients, you can have warm and cheesy homemade quesadillas on the dinner table in less than half an hour.  If you need to master the basic steps of how to make chicken quesadillas, this is the place to start!
 

Super Easy Chicken Quesadillas

 12 flour tortillas
3 c. shredded chicken
1 c. salsa  
1/2 box of Velveeta cheese or other similar cheese

    I know it is just a few ingredients and may not sound like it would be super delicious but they are.  The absolute best part is dipping the quesadilla into the salsa con queso.  Yum!!! 

    Preheat your oven to 375 degrees.

    Melt your Velveeta in a crock pot, double boiler or microwave.  I just used my crock pot.

    Once it is melted, stir in the salsa.  You can add more or less salsa depending on your preference.

     I like to boil my chicken and then shred it but any shredded chicken will work.  Now, in a large bowl, mix together your shredded chicken and about 2-3 cups of the salsa con queso. You don't want an abundance of the salsa con queso, just enough to just coat your chicken.

     Spoon some of the chicken mixture into the middle of the tortilla and fold over in half.

     Place each of the quesadillas onto a baking sheet and bake for about 9-11 minutes or until they are golden brown.  Remove and cut in half so that they are now wedges.

    Be sure to get you a bowl of the salsa con queso you made up and dip the quesadillas into it as you eat it.  So good this way.

     Serve with some Spanish rice, Mexican street corn  and refried beans and you have a complete meal!
