Recipes for the Perfect Mother's Day!

   Mother's Day is just around the corner and I'm here to help you celebrate your Mom this year.  For instance, how about preparing her breakfast in bed?  It's a cinch if you make her my lovely French Toast Casserole, Biscuits and Chocolate Gravy or even a stack of lovely Buttermilk Pancakes!

     Or celebrate your Mom by fixing her a delicious meal.  Whether she prefers pork (Pork Loin), beef (steak fingers with country gravy) or chicken (soy & garlic chicken), we have the recipes for a perfect the protein.

7 Easter Brunch Recipes

We love brunch at our house.  There are no real rules to brunch and you can just eat your favorite foods!  Here are 7 of my favorite Easter brunch recipes.  Enjoy!

1.  French Toast Casserole
     My french toast casserole is a quick and easy way to make french toast for a crowd or just for your family.  It tastes as good as it looks.

2.  Homemade Waffles.
     These waffles come out light and delicious.  The aroma of these will awaken your taste buds for sure.

3.  Homemade BIG Biscuits and CHOCOLATE GRAVY!
     If you are from the South, more than likely, you know EXACTLY what chocolate gravy is and have found memories of your mama or your grandma making this for you as a child.  If you're not from the South, you may be wondering what it is.  Well, it's exactly what it sounds like...chocolate in gravy form.

4.  Homemade Doughnuts:
     These doughnuts are truly homemade and not just made from a can of biscuits.  They taste so darned good and are so light.  They melt in your mouth!

5.  Homemade Bread Pudding:
      I love bread pudding.  It is one of those "old time" recipes that your grandma used to make.  It is simple and delicious.

6.  Homemade Blueberry Pancakes:
     Homemade pancakes are so good but homemade BLUEBERRY pancakes are even better.  Yum!

7.   Blueberry Biscuits:
      I saved the best recipe for last:  light and fluffy biscuits loaded with fresh blueberries with a delicous glaze over the top.  Nothing could be better!

Two Year Blog Anniversary

    Yahoo!  We made it.  Today marks the 2nd year anniversary for Countrified Hicks.  Can you believe it? I am so please you stuck by me for 2 years and if you are new to my blog, hope you stay awhile and have a look around.
   In the past years, I have shared nearly 100 recipes with you, numerous posts and videos on frugal living, as well as posts on how to dehydrate and can; farm living; and homeschooling.  I have completed over 260 blog posts, meaning I average a new post about once every 3 days.
      In the past two years, no post has received nearly as many page views or comments as the post on frugal living on how our Family of 4 live off of $1300 a month. That post alone generated over 65,000 page views!
     Other popular posts over frugal living include:

French Toast Casserole

   One of my hubby's all time breakfast favorites is my French Toast Casserole.  He absolutely loves it.  It is simple to make and really tastes great.  I made it for him recently and decided to share with you all how I make it.



French Toast Casserole
 
 12 slices of bread
4 eggs
1 1/2 c. milk
1/4 c. sugar
1/4 tsp. salt
1 1/2 tsp. vanilla
2 T. butter
3 tsp. cinnamon
1 tsp. nutmeg
                      
             
 Preheat your oven to 350 degrees.  Melt your butter and pour it into a cake pan to coat the bottom.  Line the bottom of the pan with the slices of bread.
 


 Now, in a large bowl, mix together the eggs, milk, sugar, salt and vanilla.  Lay 6 pieces of bread in the bottom of the pan.  Pour over the bread and let sit about 5 minutes to soak in.  Then lay 6 more pieces of bread on top and pour the rest of the milk mixture on top.

 Finally, sprinkle the cinnamon and nutmeg over the top.  Bake for 40 minutes.

This French Toast Casserole goes great with a cup of Countrified French Vanilla Coffee!

Be sure to top these pancakes with some Easy & Delicious Homemade Pancake Syrup.  Everything it takes to make the syrup are already in your pantry.
