10 Simple Crock Pot Recipes

    After the holidays, I sometimes feel like I am in a sugar coma so to combat it, I love to have some hearty (but easy) crock pot meals.  Below are my favorite crock pot dinners.  

 

1. Perfect Crock-Pot Roast

    I don't know about you, but one of my favorite meals is Roast, potatoes, and carrots.  Our family likes it so much that we have it once a week, usually for Sunday Lunch.  Growing up, my mother always cooked the roast in the oven but my preferred method is the crock-pot.  I prepare everything and get it on right before we go to bed on Saturday night on low and it is ready for Sunday lunch.

2.  Creamy Pork Chops.

    This is a super easy recipe to make and better yet, you this DELICIOUS meal without hardly heating up your kitchen.  The pork chops come out so tender that you have to be careful dipping them out or they will literally fall apart!

3.  Crock Pot Swiss Steak.

    This is the most tender Swiss steak you will EVER eat.  It just falls apart and melts in your mouth!

     These are the most tender, fall-of-off-the-bone ribs you will EVER taste.  They are so easy to make also.  Any kind of ribs work but I prefer to use country style ribs but baby back ribs will work too.  These turn out absolutely fantastic and the recipe and how-to is basically fool-proof.

     This makes some great tasting chicken that I love to shred and use to make some fine tasting sandwiches that can be served on Homemade bread or on homemade hamburger buns.  In fact, we prefer this over Pulled Pork.   A friend of mine recently tasted this and said it is now one of her stand by favorites.  It definitely is just what the doctor ordered.

Hi, everyone!

    2021 has almost come to a close and a new year is about to begin.  Today we are going to look back at some of my most popular recipes of the year 2021.

 1. Chicken & Rice Soup Mix in a Jar.  It is the most viewed recipe for 2021 and has placed in the top 10 each year since 2017. It has been viewed over 5,000 times this year and over 75,000 since I first posted it.  Click on the name to see why it is so beloved. 



2.  Only one of two posts that makes the top 10 this year that is not a recipe.  It is How and Why to Dehydrate Aloe Vera

 



3.  Dehydrating potatoes for long term storage is the other non-recipe post to be most viewed this year.  Dehydrating potatoes is a smart move.  Ten pounds of potatoes, once dehydrated, will fit into just 3 quart jars.  Talk about space saving! 

 


4.  True Southern Pimento Cheese Spread. Makes the perfect sandwich spread and is so much better than any you can buy at a store.

     I came up with this recipe years and years ago.  It is a mix you can store for up to 3 months (or more) and will make 3 full size 9"x13" cakes.  The cake is so good that we generally don't even frost it because it is so moist and delicious no other topping is needed.  Occasionally we do dust the top of it with powdered sugar but that is more for presentation than anything.
 

 
 
      Rice pudding is creamy, sweet, delicious and just perfect.  It really is the ultimate comfort food.  My recipe adds the classic combination of cinnamon and raisin to make the classic recipe even better.  It has the perfect texture together with the soft rice and chewy raisins, so follow my recipe and whip you up this old time favorite dessert today!

Easy Ham & Ranch Pinwheels

    



     Our family loves these pinwheel appetizer sandwiches.  They are so pretty visually and they taste amazing.  They are loaded with a yummy cream cheese filling and layered with ham and cheese that are so fresh and tasty. Whether you call these pinwheels or a roll-up, they are wonderful regardless.

 

·        3/4 lb.-1 lb. thinly sliced ham

·        2 (8 oz.) boxes cream cheese, softened

·        8-10 (8”) flour tortillas or 4-5 (12”) flour tortillas

·        ½ c. shredded Cheddar cheese (or your cheese preference)

·        1 envelope ranch dressing mix

·        Lettuce or spinach (optional)

 


 In a small bowl, beat together the cream cheese and ranch dressing mix until smooth.  Spread about 2 tablespoons of the cream cheese mixture over each tortilla.  Top with 2-3 layers of ham and then 2-3 tablespoons of cheese and lettuce or spinach if using over half of the tortilla.  Cream cheese is spread over all the tortilla but the ham and cheese and other toppings are only on half of the tortilla.  Roll each tortilla up tightly and secure with a toothpick and repeat with each tortilla.  Refrigerate for at least one hour (I generally leave them for 2 hours) and then slice into 1” slices.  Serve with the spirals facing upwards and enjoy.

 


  Sometimes, I make these up and do not slice them up but serve each tortilla roll-up as a meal for my husband and sons. 

 These pinwheels are always a hit at parties.  They are perfect as they are but I generally place some homemade salsa close by because some people really love dunking them into salsa before eating.
