Slow Cooker Chicken Parmesan Soup

     I love meals that can be cooked in the slow cooker or crock pot.  This soup is one of those meals.  I can just throw all the ingredients into the slow cooker in morning and forget about it until supper time.  This meal is everything that you love about Chicken Parm but in the form of a decadent and delicious soup.  It is sure to be a family favorite.  






Slow Cooker Chicken Parmesan Soup

1 c. Parmesan cheese 
1/2 c. mozzarella cheese
1 (15 oz.) can petite diced tomatoes
2 chicken breasts (1 lb.) 
2 c. pasta (elbow macaroni, rotini noodles, etc.)
1 T. extra virgin olive oil
1 T. basil
2 tsp. oregano
1 tsp. parsley
1 tsp. minced garlic
salt and pepper to taste
parsley and Parmesan cheese for garnish (optional)

    Put all the ingredients, except for the garnish items, chicken, and  pasta, into your slow cooker.

Now stir gently and add in the chicken.

    Replace the lid and turn on the slow cooker onto low and cook for 6-8 hours.  Alternately, you can cook it on high for 4 hours.
 
     Once the time has elapsed, remove the lid and shred the chicken.  Stir in the pasta and allow it to cook for another 20 minutes or until the pasta is al dente. 
 
 


     It is now ready to serve.  This goes heavenly with garlic bread or Italian Flat Bread. Eat and enjoy!
