Loaded Boiled Cabbage
This is a take of my Southern Boiled Cabbage recipe. It is made the same way but this recipe adds a lot of extras to it like potatoes, bacon and smoke sausage. Yum! Whereas the Southern Boiled Cabbage is a side dish, this Loaded Boiled Cabbage recipe is a meal into itself. I sure hope your family enjoys it as much as my family does!
Loaded Boiled Cabbage
1 head of cabbage
4 potatoes, cubed & peeled
1 pkg. smoked sausage, cut into bite-sized chunks
1/2 lb. bacon, cooked & crumbled
4 c. chicken broth
2 T. finely diced onions
2 T. butter
2 T. olive oil
1/2 tsp. salt
1/4 tsp. pepper
In a pot, parboil the potatoes. Parboiling is just partially cooking your potatoes. Fill a pot with water and add in the potatoes.
Bring them to a light boil and allow them to gently boil for 7-8 minutes. Once the time has elapsed, turn off the heat and remove the pot from the stove. Drain the potatoes and set aside.
Now take the cabbage and cut it into quarters and remove the hard stem. Slice each quarter in half and in half again. In a large pot, add in your butter, olive oil, salt, pepper, and cabbage.
Pour in the chicken broth and stir so all of the cabbage is coated. Now, stir in the smoked sausage, bacon and potatoes.
Bring the pot to a quick boil over medium-high heat and then cover the pot and reduce the heat to medium-low and allow it to simmer for 17 minutes, stirring occasionally. Serve and enjoy.
You know it's good when your menfolk resort to licking the bowl.
