Coffee Jelly!

   The other day, I shared on my FB page that I had just made some Coffee Jelly for my hubby and MANY of my followers requested the recipe.  Here it is for y'all to enjoy!
 

 

Coffee Jelly Recipe, uses for coffee, unusual flavors of jelly,


Coffee Jelly

4 cups VERY strong brewed coffee
1/4 c. lemon juice
5 1/2 cups sugar
1 box Surejell

     Stir the coffee, lemon juice and Surejell together in a large pot.  Bring to a boil over high heat.  As you are waiting, prepare your jars by either running them through the heat cycle of your dishwasher; boiling them for 10 minutes; or putting them in a warm oven for 15 minutes.  Also, put on a pot of water to boil for processing.   Once the coffee reaches a full boil, stir in the sugar and return to a boil and let it boil for one minute.  Remove the pan from heat and ladle it into the hot prepared jars.  It should make 6 of the half-pint jars.  Water bath can the jars for 10 minutes. 

This coffee jelly goes great with biscuits or pancake muffins
