Dehydrating Carrots

    At my home, my favorite way to preserve the harvest from our garden is by dehydrating.  It takes a lot less work and takes up a lot less space when you dehydrate.  For example, if you were to open up a store-bought can of peas and dehydrate the peas, that entire can would fit into 1/3 cup measuring cup.  And when you dehydrate your items, they are preserved for a LONG time (years).

     To dehydrate carrots, wash the carrots, peel them and cut off the ends.

I save the carrot peelings and feed them to our chickens and rabbits.

  Then cut the carrots into small chunks and place in your dehydrator.

   I just turn on my dehydrator when I go to bed and it is done in the morning.

  To rehydrate the carrots, just put them in hot water for 15 minutes or just toss into your favorite soup, stew, or casserole.  I also use my dehydrated veggies in my "meal-in-a-jar" recipes (such as my Chicken & Rice Soup mix in a jar).

  1. I love to dehydrate now that I have a decent dehydrator! All my extra smidges of veggies get dehydrated for soups and such. Herbs, onions, bell peppers, celery... all get dehydrated and ground for seasoning. Great post!

  3. We started dehydrating lots of veges, even just a few we would have left over and add them to a canning jar in the cupboard. I've not done carrots yet but they would be a perfect fit.

    1. Kathy, I do the same thing. If we do not eat all of the vegetables from a meal, I don't care if it's less than a serving, I dehydrate it. It adds up! Thanks for stopping by!
