Ooey Gooey S’mores Dip

     

    This sensational s’mores dip is loaded with melted chocolate and toasty marshmallows and takes just a few minutes to prepare.  It is a real crowd-pleasing, creamy and sweet dessert.  No campfire required!


 

·         14 oz. of sweetened condensed milk

·         1 ½ c. milk chocolate chips

·         15 Jumbo marshmallows, cut in half or use mini marshmallows

·         ½ tsp. vanilla

·         Pinch of salt

·         Graham cracker squares, for serving

·         Marshmallows, for garnishment

·         Chocolate squares (candy bar), for garnish, optional

 

Preheat your oven to 350 degrees.

In a small bowl, mix together the sweetened condensed milk and the chocolate chips.  Microwave in 30 second bursts.  Be sure to stir after each interval.  Once the chocolate chips are completely melted, remove from the microwave.  Stir in the vanilla and salt.

Pour the mixture into a 9”x13” cake pan or cast iron skillet.  Arrange the marshmallows on top and bake for 6-8 minutes or until the marshmallows are golden brown.  Let dip cool slightly and then dig in. 

 


 

Serves 8 with each serving having about 60 carbs.

Dip up this sweet treat with graham crackers, fruit, cookies, pretzels, homemade crostini, or even potato chips.

Homemade Old Fashioned Blackberry Lemonade Recipe

             This blackberry lemonade is really easy to make and turns out so light, tangy and refreshing.  It is the perfect balance of sweet and tart!

 

·        4 ½ c. water, divided

·        1 c. blackberries

·        1 c. sugar

·        1 T. grated lemon zest

·        Lemon slice, for garnish, optional

 

In a large saucepan, bring 2 ½ cups of water and the sugar to a boil.  Allow the water to boil for 2 minutes, stirring occasionally.  Remove from heat and stir in the lemon juice, lemon zest and the remaining 2 cups of water. Allow the mixture to cool a bit.

Once it has cooled a bit, pour 1 cup of the mixture into a blender.  Add in the blackberries and blend well.  Strain and discard the seeds.  Pour this mixture and the remaining lemon mixture into a one gallon pitcher.  Stir well.  Fill the pitcher the rest of the way up.  Refrigerate until cold or serve over a cup of ice. 

 


     Each serving has about 50 carbs.
