Deliciously Moist Iced Lemon Loaf

    I love to serve these lemon loaves to my family, especially during the warmer months.  They are so refreshing, moist and tender.  


 

For the lemon loaf:

  • 1 ¾ c. all-purpose flour
  • 1 c. sugar
  • ½ c. butter, softened
  • ½ c. sour cream
  • 2 lg. eggs
  • 1 tsp. vanilla
  • 1 tsp. grated lemon zest
  • ½ tsp. lemon extract
  • ½ tsp. salt
  • ¼ tsp. baking soda

For the icing:

  • ¾ c. powdered sugar
  • 1 T. lemon juice
  • ½ tsp. grated lemon zest

Preheat your oven to 350 degrees.  Grease and flour a large loaf pan (8”x4”).  Set aside. In a large bowl, cream together your sugar and butter until it is light and fluffy.  Beat in one egg at a time.  Mix in the lemon zest, vanilla and lemon extract. 

In a different bowl, whisk together the flour, salt and baking soda.  Mix in with the sugar/butter mixture. Mix in the sour cream and then pour into your loaf pan.  Bake for 35-40 minutes or until an inserted toothpick comes out clean. Allow to cool in the pan for about 15 minutes and then remove the loaf from the pan.

     As the loaf cools, prepare the icing by beating the icing ingredients together.  Spoon over the cooled loaf.  Slice and enjoy.  

 

    Grab a cup of spiced apple cider, french vanilla coffee, or even a Double Chocolate Chip Frappe!
