Homemade Creamy Alfredo Sauce

A classic and creamy sauce that is super easy to make.  This sauce coats fettuccine or linguine noodles beautifully and it turns out so delicious and comforting.  It also goes great on top of steaks or veggies (like asparagus) or even put some on a sandwich (or burger) in place of mayonnaise.

2 c. heavy cream

1/2 c. Parmesan cheese

1/2 c. Romano grated cheese

2 lg. egg yolks, beaten

6 T. butter

1/4 tsp. salt

In a medium sized saucepan, melt your butter over medium-low heat.  Once the butter is melted, stir in the heavy cream, cheeses, egg yolks, and salt.  Cook over medium-low heat until a cooking thermometer reaches 160 degrees.  Do NOT let the sauce come to a boil.

Makes about 2 1/2 cups of Alfredo sauce.

A serving of sauce on its own has about 3 grams of carbs per 1/4 cup serving.
