Delicious Soups to Warm Your Heart and Soul

    It is officially soup season.  I love eating soups anytime of the year but especially in winter time.  A hot bowl of soup can warm you up on these cold winter days and they are just so comforting too.  It just hits the spot!  Grab a bowl of soup and cuddle up with a blanket and stay warm!

    This first one is not a soup but a stew but eating a good old fashioned bowl of the stew is never a wrong choice. 

 


    Potato soup is my all-time favorite soup.  I could literally eat it every single day.  It is the most satisfying, tummy warming soup there is to me. 


    Growing up, my Mom would fix Ham & Beans at least once a week during the winter.  It is a hearty soup that conjures up sweet memories for me. 


    This 15 bean soup recipe is one that requires no soaking of the beans and is hearty, rich and smells delicious as it cooks. 


    My youngest son Ronny could eat Tomato soup every day.  It is rich and creamy and goes perfect with a grilled cheese sandwich.


     Creamy chicken and rice soup is a thick and flavorful soup and turns out marvelously every time.


    

 Cauliflower soup is so warm and inviting.  Curl up with a bowl and a good book and enjoy your evening.


   

 Rainbow soup is a colorful soup that is full of flavor!

Chocolate Cream Cheese Frosting

    I love baking from scratch.  Nothing is better than food that is truly homemade.  Store-bought items just can't compare to the taste and this is so true when it comes to cream cheese frosting.  It is sweet, silky and creamy with just a touch of tang.  It spreads so nicely and goes perfect with my homemade chocolate cake, a wacky cake, my hot fudge cake or even a white sheet cake!  Yum!  I always have to frost my cakes right away or else I'll catch my boys eating this frosting by the spoonful until it is all gone! 

 


 Chocolate Cream Cheese Frosting

 12 oz. cream cheese (1 1/2 blocks)

3 1/2 c. powdered sugar

3/4 c. butter

2/3 c. unsweetened cocoa powder

1-2 T. milk or evaporated milk (I make my own)

2 tsp. vanilla

1/8 tsp. salt


    In a large mixing bowl, beat the cream cheese on high with the paddle attachment until the cream cheese is smooth.  Then add in the butter and beat until creamy.

    Slowly add in the powdered sugar, cocoa powder, milk and salt until well blended.

     This makes enough frosting to frost two 9"x13" cakes or around 48 cupcakes.
