We enjoy this creamy chicken taco soup recipe a lot. It is quick and easy to make and tastes delicious. I made a pot of this the other day and Bub ate the entire pot (over the course of a few days) by himself.
Creamy Chicken Taco Soup
1 can (10 oz.) chunk white chicken breast
1 can (10.5 oz) can cream of chicken soup
1 can (14.5 oz.) chicken broth
1 can (15 oz.) corn, whole kernel, drained
1 can (14.5 oz.) petite diced tomatoes, drained
1 can black beans, drained
1 envelope taco seasoning
1/2 tsp. cumin
1/2 tsp. garlic powder
Combine all ingredients in a large soup pot and cook on medium-high heat until it comes to a slow boil. Once it starts the slow boil, turn the heat to low and let it simmer for 15 minutes. Enjoy.
We love to top ours with a bit of shredded cheddar and Colby jack cheese combo and some tortilla chips. Pour a bit of Homemade Taco Sauce on it too! Delicious!
