Pumpkin Flavored Macaroni & Cheese

My husband and teenage son loves pumpkin anything any time of the year and most people love mac & cheese, so why not combine the them?  It may sound weird but they really do go together to make a really savory dish.  Not only is pumpkin yummy tasting but adding it to foods boost the fiber and vitamin content.  This mac & cheese is very creamy and filling.

Pumpkin Flavored Macaroni & Cheese

3 c. macaroni
2 1/4 c. milk
1 1/4 c. shredded cheese (we used a cheddar & Monterey Jack blend)
1/3 heaping cup of flour
1 can pumpkin
2 T. butter
1/2 tsp. sage
1/4 tsp. nutmeg
salt & pepper to taste

Preheat your oven to 375 degrees.  Lightly spray a 9"x13" cake pan.  Cook macaroni in salted boiling water, according to directions.

While macaroni cooks, melt your butter in a medium pot over medium heat.  As soon as the butter begins to darken, add the flour and whisk it until you form a "roux".  Then, leaving the burner on, slowly whisk the milk into it, which will form a creamy and white sauce.

Continuously whisk the sauce for 3-4 minutes.  Slowly add in the pumpkin and stir.

Oreo Fluff Recipe

The recipe I am sharing today is one my family really loves.   I do not make it often because when I do, my family almost makes themselves sick by eating it all in one setting.  It is called "Oreo Fluff" (or at least, that is what my family calls it.)

Oreo Fluff

 2 c. milk
24 Oreo Cookies
1 small box chocolate instant pudding

We used the Double Stuf Oreos.

The ingredients...

For the marshmallows, we always buy the package of colored marshmallows but you can use plain white ones, just your preference.

First thing you will need to do is crush up the Oreo cookies until they are crumbs.  I let my hubby do this part while I mix up the rest.

In a large bowl, pour in the pudding mix and milk.  Whisk them together for 1 1/2-2 minutes.  Stir in the Cool whip and marshmallows, and by this time, the Oreos should be crushed.  Stir the crumbly cookies in too.  That is it.

Yum, yum, yummy!

My boys like to dip Oreo cookies into the fluff and use it as a dip but my darling hubby just eats this stuff by the spoonful.  Either way is acceptable.  It is soooo good.

Hope you enjoy it with your family too.
