How to Make Delicious Egg Rolls

   I have never tried egg rolls before but recently as I was shopping at our local grocery store I noticed that they had some egg roll wrappers on sale so I decided to purchase them and give them a try.  I'm glad I did because they turned out FANTASTIC!  So much so that Ron and Bub said they would never eat another frozen egg roll again because the frozen ones don't even compare to how good mine tasted.





   As they cook, the whole house started smelling so enticing.  Just the aroma alone had our mouths watering.  They turned out so flavorful and moist.  Bub said even at the restaurants he has tried egg rolls at, theirs were really dry inside but mine are real moist and yet not soggy.  They crisp up so well that even Ronny liked them and Ronny doesn't like pork or cabbage.  With him being autistic, it is so hard to get him to try new food but he actually asked if he could try one and we said "yes" and he ended up eating several of them.  Yahoo!  

Delicious Egg Rolls

12 egg roll wrappers
1 lb. pork sausage 
1 (16 oz.) bag of coleslaw mix
1/4 c. soy sauce
1 T. rice vinegar
1 tsp. minced garlic
1 tsp. sugar
1 tsp. cornstarch
1 tsp. water

     Brown your pork sausage with the ginger and garlic.  Drain lightly, you are just trying to drain out most of the juice without losing all the flavor of the spices.

      In a small bowl, mix together the soy sauce, rice vinegar, sugar, water and cornstarch.  Once mixed together, add it into the sausage mixture and allow it to heat up.  It should take just a minute or so.  

  Now grab a large bowl and add in the coleslaw mix.

    Add in the sausage mixture and stir well.

    Now get your package of egg roll wrappers and open them up.

    Take a wrap and lay it in front of you so it is shaped like a diamond.


   Now place about 3-4 tablespoons of filling onto the wrapper.


    Fold up the bottom of the wrapper over the filling.


    Fold up the sides.


   Finally, finish rolling it up the rest of the way but leave a small part out.


   Now using a clean finger or small brush, smooth a bit of water over the edge.


   Press to seal.



   Do the same with the rest of the filling and wrappers.  Once they are all rolled, heat up a few tablespoons of oil in a skillet and fry the egg rolls until they are golden brown.  




    They are great to eat just like this but I made a sweet and sour sauce for us to dip ours into.

    Sweet & Sour Sauce

1/3 c. brown sugar or honey
3 T. ketchup
2 T. rice vinegar
2 T. cornstarch
1 T. soy sauce

   Stir together all the ingredients until well blended.    Dip your egg roll into the sauce and enjoy!
