Creamy Banana & Mandarin Orange Pie


This is a super easy pie to make and tastes like sunshine!  It is very light, creamy and tropical.  Very refreshing!

 

  • 1 graham cracker pie crust
  • 8 oz. cream cheese, softened
  • 14 oz. sweetened condensed milk
  • 15 oz. can mandarin orange segments, drained well and divided
  • 3 med. bananas, divided
  • 1/3 c. lemon juice
  • 1 tsp. vanilla

In a large mixing bowl, beat the cream cheese until fluffy.  Gradually beat in the sweetened condensed milk.  Stir in the lemon juice and vanilla.

Slice up 2 of the bananas and line the pie crust with the bananas and then 2/3 of the mandarin oranges. Pour the cream cheese filling over the fruit.  Place in the refrigerator and allow the pie to chill for about 3 hours or until it is set.

Right before you are ready to serve the pie, cup up the last banana and using a bit of lemon juice, dip the pieces into the lemon juice, drain the lemon juice off and the garnish the top of the pie with the banana slices and the remaining orange segments.  Serve.  Any leftovers need to be refrigerated but I doubt there will be any left.  It is so good.

Recipe: Summer Pie

This is a great recipe to enjoy on a nice summer evening. It is really light and fluffy and goes down great with a tall glass of iced tea.

Summer Pie
1 sm. pkg. strawberry Jell-O
2/3 c. boiling water
1/2 c. cold water
8 oz. Cool Whip
ice cubes
graham cracker crust

Pour envelope of Jell-o into a bowl. Stir the boiling water into the Jell-o and continue to stir for 2 minutes. Take a 1 cup measuring cup and add in the cold water and enough ice to equal 1 cup. Pour into Jell-o and stir until the ice melts. Fold in the Cool whip and place in refrigerator for 30 minutes. After 30 minutes, remove the mixture and spoon it into the crust. Refrigerate another 4 hours and then enjoy!
