Mexican Bean Soup Mix in a Jar


    This mix makes a really delicious and hearty soup that is perfect any time of the year.  It is bursting with flavor and is easy on your pocketbook.  It is also great to take on camping trips and it freezes well too.
 
  • 3/4 c dried pinto beans
  • 3/4 c. navy beans
  • 3/4 c. kidney beans
  • 3/4 c. black beans
  • 1 c. small cut pasta
  • 1/2 c. rice
  • 4 chicken bouillon cubes
  • 2 T. dehydrated onion
  • 2 T. parsley flakes
  • 1 T. chili powder
  • 2 tsp. cumin
  • 1 tsp. oregano
 
    Layer the beans into a quart jar.  Place the pasta in a small baggie.  Place the rice into another small baggie.  Put the rest of the ingredients into a 3rd small baggie.  Place baggies into jar with the beans.  

To make the soup:
    Rinse the beans and place them into a heavy bottomed soup pot with 8 cups of water.  Bring to a boil.  Once they start to boil, turn off the stove and remove the pot from heat  Put a lid on the pot and let it sit for an hour.

    Once the hour has elapsed, drain the beans and put them back into the pot.  Add in 8 cups of water and the contents of the 3rd baggie (spices, etc.).  Bring to a boil, reduce heat and simmer for an hour with a lid on the pot.  The beans should be tender at this point.  If not, allow them to simmer a bit longer.  

    Once the beans are tender, stir in the rice and cover and simmer about 15 minutes.  Now stir in the pasta and 1/2 cup of water.  Uncover the pot  Cook for 10 minutes.  Serve and enjoy.

Top 3 Favorite Mixes for the past Month

    There were 3 really popular mixes this past month.  

1.  Hot Apple Cider Cinnamon Spice Mix

This recipe is for homemade Hot Apple Cider Cinnamon Spice mix and it is simply amazing.  Transform any apple juice, red wine, or apple cider into a lovely and aromatic drink that will turn cold days and cold nights into a comforting experience.  It just smells and tastes like the holidays!


 

2.  Homemade Au Jus Mix

 Our family loves Au Jus but it is not always easy to make when I'm in a time crunch.  I decided to come up with a homemade mix that would be similar (but superior) to the store-bought envelopes of the mix.  This turned out even better than I dreamed.  There is so much flavor that comes from the mix and you can have the homemade taste in a matter of minutes!

Chicken & Rice Soup Mix in a Jar

    I like having many kinds of "mix-in-a-jar" meals around.  My goal is to have 365 of them made up, one for every day of the year.  They are great on days you feel lazy or anything like that and perfect for any type of emergency.  Most of them you just toss into a pot of boiling water and in a bit the meal is done.  Some meals require adding a few more ingredients but the beauty of these is most of the prep work is done for you.
 

 


    We just recently mixed up a bunch of "Chicken & Rice Soup" mixes and wanted to share with you how we do it.

Chicken & Rice Soup Mix in a Jar

   1 T. dried onion flakes                          1/4 c. dehydrated carrots
  1/3 c. dehydrated peas                         2 T. parsley
  1 1/2 tsp. pepper                                  3 chicken bouillon cubes
  3 c. long rice

    Put all the ingredients into a large bowl and stir well.  Pour into a one quart jar.  Directions for use are to put 4 1/2 cups of water and 2 T. of margarine into a pot.  Add in 1 cup of the mix and bring to a boil.  Once it boils, reduce the heat and simmer for 40 minutes.  You can add in some cooked chicken after it is cooked if desired but it has a lot of flavor on its own without the addition of the meat.
