Flavorful Zucchini Sticks

   If your garden was like my garden this year, then you had an abundance of zucchini.  Here it is the 1st week of September and the harvesting of zucchini isn't slowing down a bit and won't for awhile.  Because we are getting so many, we are finding lots of ways to make and preserve this wonderful vegetable.  We dehydrate zucchini in shreds, cubed, and make zucchini chips with them.  We also make Parmesan Zucchini and today, we are making Flavorful Zucchini Sticks.  :-)




Flavorful Zucchini Sticks
 
 1-2 large zucchini
1/2 c. flour
1/4 c. Parmesan cheese 
2 eggs
3 T. milk
1 tsp. oregano
1/2 tsp. garlic powder
1/8 tsp. pepper

                        

    Peel the zucchini and slice off the ends.  Preheat the oven to 425 degrees and spray a cookie sheet with cooking spray.  Now take the zucchini and cut them into about 3" long "sticks".

  Now whisk the eggs and milk together in a small bowl.

  Then in a separate bowl, mix together the flour and spices.

   Now, take a few of the zucchini sticks and roll them in the flour mixture, then into the egg mixture, and then back into the flour mixture until each one is coated well.  Place the coated sticks onto the baking tray and bake for 20 minutes.

Dehydrating Zucchini

   We have been harvesting HUGE zucchini from our garden this year.  It is the end of August and my hubby is still bringing in a few of them a day.  There is only so much you can eat before it seems to be coming out of your ears.  What to do with it all you may ask?  You can make Parmesan Zucchini; Zucchini bread; Zucchini sticks or you can dehydrate it and make Salt & Vinegar Zucchini Chips, or dehydrate it for future use in cubes or by shredding it.  Today, I'm going to show you how to dehydrate the cubed zucchini.

     First, wash your zucchini and cut off the ends.

Slice the ends off the zucchi.


  Now, cut the zucchini in half and scoop out the seeds and stuff.    We feed this too our chickens.

Now, start cutting the zucchini into cubes.

 Once it is all cut up, place in your dehydrator for about 12 hours.  I just start mine before I go to bed and after my morning coffee, they are done.

     Use the dehydrated zucchini in soups, stews, or casseroles.  You can rehydrate them first (15 minute soak in hot water) or just throw them in dry into the soup or whatever and they cook up just fine.
