How to Make Salmon Patties

      

     Salmon patties were a meal my Mom made about once a week when I was growing up.  I was talking to Ron (my hubby) about it recently and he said they had it frequently growing up too.  He said he really would like it again so I whipped them up and he loved it.  If it's been a long time since you have had some too, why don't you follow my recipe and make up a mess!

           They are easy to make and are delicious for lunch or supper.  If you follow my recipe they will turn out perfectly each and every time.  They are crispy and golden on the outside and flaky and tender on the inside.


How To Make Salmon Patties
 
 1 (14.75 oz.) can pink salmon
1/2 c. Panko bread crumbs 
1/4 c. Parmesan cheese
1/4 c. mayonnaise
1 egg, beaten
1-2 T. olive oil
1/2 tsp. lemon juice
1/4 tsp. pepper
1/4 tsp. dill
 
    Open the can of salmon and drain it.

     I always like to pick out the "good stuff" from the "bad stuff" when it comes to salmon.  I don't like the black parts or the spine, etc.  So I pick all that out and throw it away.  You can keep everything together and use it all but I prefer not to.
 
     Now, put the salmon into a medium sized bowl and use a fork to break it up some.  Stir in the rest of the ingredients, except for the olive oil, and mix well.

     Pick up a small handful and pat and shape into patties.  I make mine about 3/4'' to 1'' thick.  If they are too dry, add a touch more mayonnaise.

      Place the olive oil in a cast iron skillet and heat the oil up on medium-high heat.  Once the oil is nice and hot, place 2-3 salmon patties into the skillet.  Cook them until one side is golden brown, then flip them over gently and cook the other side until they are golden brown.  Each side takes about 3-4 minutes to cook, depending on the thickness of the patties and temperature of your stove.

      Place the cooked patties onto a paper towel covered plate to drain the patties and then serve.  I like to serve salmon patties with asparagus or baked beans and some French fries.
 

 

     Each salmon patty has 20 grams of carbs.
