Dehydrating Cucumbers: Spicy Cuke chips

    We had an abundance of cucumbers this year and I decided to dehydrate some.  We made spicy cuke chips that are delicious.  One great aspect of dehydrating cukes is that if you generally burp from eating them, you don't when you eat them after they are dehydrated.

     Begin by washing your cucumbers and slice them by hand or with a mandolin.  Then put them on your dehydrator trays and sprinkle with chili powder.  It may seem like a weird combination, but trust me, it works!

Here are the cucumber slices ready to be dried.
 Let them dry for about 8 hours (or overnight).  Remove and eat right away or place in a canning jar.  They will last years this way.
