Our family loves about anything with cinnamon, especially cinnamon rolls but to make cinnamon rolls from scratch is time consuming. We love how they turn out but with having a farm and so many animals to care for, we don't always have the time to make them. Here is the perfect solution: Cinnamon Roll Cake.
It is super moist and takes about 10 minutes to mix it up and less than 30 minutes to bake. A treat well worth the effort. In fact, my husband has now decreed this as his new favorite cake, replacing the Red Velvet Cake.

Cinnamon Roll Cake
3 c. flour
1 1/2 c. milk
1 c. sugar
1/2 c. butter
2 eggs
1 T. plus 1 tsp. baking powder
1 T. cinnamon
2 tsp. vanilla
1/4 tsp. salt
Topping:
1/2 c. butter, melted
1/2 c. brown sugar
1 T. flour
1 T. cinnamon
Glaze:
2 c. powdered sugar
1/3 c. milk
1 tsp. vanilla
Preheat your oven to 350 degrees. Spray a 9"x13" cake pan with cooking spray. Mix all the ingredients of the cake together and stir well. Once it is mixed well, pour into your prepared pan.
Next, mix together the topping ingredients together. Stir well and then drop by teaspoonfuls over the cake batter.
Once you have the cake top covered with "drops", take a butter knife and "swirl" the topping.
Bake the cake for 28 minutes. As it is baking, mix together the glaze. Once the cake is done, remove and let it sit for 15 minutes then glaze it while it is still warm.
Cut into pieces and enjoy. It literally melts in your mouth!!!

DeleteMade this today! My hubby is diabetic, so I reduced the sugar in the cake and topping a bit, and decided to skip the glaze. I added some soft raisins to the batter,too.
