Au Gratin Potatoes

    I love my au gratin potato recipe mainly because it gives me a chance to use some of my dehydrated potatoes.  :-) 




Au Gratin Potatoes

 1 quart jar of dehydrated potatoes (or enough potatoes to cover bottom of your pan)
4 c. milk
2 c. shredded cheddar cheese
1/2 c. flour
1/2 c. butter
1 T. parsley
1 tsp. salt
1/4 tsp. pepper 

                                                                                                                                                                                      Preheat the oven to 350 degrees.  Soak your dehydrated potatoes in boiling water for 10 minutes.

The dehydrated potatoes soaking in hot water. 


 Drain and then place them into a 9" x 13" cake pan.  Sprinkle the onion on top.

Cover the bottom of the pan with your potatoes and sprinkle on the onions. 


    In a sauce pan, melt the margarine.  Once melted, whisk in the flour, salt, pepper, and parsley flakes.  Slowly stir in the milk.  Bring to a boil and let it boil for 2 minutes.   Stir in the cheese.

Use as much or as little amount of cheese as you desire.


    Now, pour the sauce mixture over the potatoes.  Bake for 1 hour.  Remove and enjoy!

Pound Cake Recipe


      This pound cake truly is the best pound cake you will ever taste.  Hope your family loves this recipe as much as my family does. Try it and let me know how you like it.

Pound Cake
 
 3 1/2 c. cake flour
3 c. sugar
1 c. milk
1 c. Crisco shortening
5 lg. eggs
2 sticks of butter
2 1/2 tsp. vanilla

                        

        If you do not have cake flour, you can use all purpose flour but it just will not turn out as well.  Just FYI, cake flour is made predominantly of soft wheat. Its fine texture and high starch content make it ideal for making tender cakes, cookies, biscuits, and pastries that do not need to stretch and rise much.
 
        Preheat the oven to 325 degrees.  Mix all the dry ingredients together in a large mixing bowl.  Soften the margarine and add it in, along with the Crisco, milk and vanilla.  Beat in eggs one at a time.   Grease and flour a bundt pan and a regular sized bread pan.  Pour the batter into the pans and bake for 60 minutes.

      This recipe will make one bundt style cake and one cake made in a bread pan.  For some reason, I think the one made in the bread pan always tastes better.  Go figure.

Happy 1 Year Anniversary

   Wow!  It is so hard to believe but one year ago, I started this blog.  I cannot believe how quickly time flies.  There has been many times that I have neglected the blog and for that I am sorry.  Writing it and having the Facebook page and visiting with you all has helped me more than I am sure has helped you.  I have met so many wonderful people and you all mean the world to me.  And the stuff I have learned!  Man, oh man!  Thanks for hanging with me for the past year and hope we will grow and learn more from each other this next year.
   Here are some facts from the first year of my blog and FB page:
              In one year (365 days), I have written 129 posts.  That equals to me writing one post every 3 days for a year.  Not as bad as I thought.  :-) In those 129 posts, I've received 1459 comments.  Gee whiz!  Now that is impressive.  Do you know what that tells me?  It tells me how engaged and responsive my followers are.  I average ELEVEN comments per post.  That is so amazing and wonderful.  Thank you for communicating with me and being interested in what I have had to say.
    Again, thank you everyone!

Another walk through our Woods

    We got to experience another 70 degree day yesterday and took a walk around our property.  We have such great views and wanted to share the nice day with you all.

Just one of our views from our property.  That mountain/hill has lots of  hang gliders who jump from it.  It is neat to watch them soar around from our home.

Some of the woods on the property.  We have plenty of wooded areas  and have black bears , mountain lions, and deer, as well as, squirrels, opossums, rabbits, and racoons.

Our pond from a different angle.  The level is way down due to the drought.


    I love our homestead.  It is just perfect to us.  We have 3 wells, the creek that runs behind our home and a small pond.  Just to the east of our property is a large water shed with lots of good fishing in it.  We have fruit and nut trees and gardens and lots of wild life.  It is our little piece of heaven and we are very thankful for it.
